This is often called a "self-saucing" cake because it creates its own rich chocolate fudge at the bottom while it bakes.
Ingredients
• The Batter: 1 cup all-purpose flour, 3/4 cup sugar, 2 tbsp cocoa powder, 2 tsp baking powder, 1/4 tsp salt, 1/2 cup milk, 2 tbsp melted butter, and 1 tsp vanilla extract.
• The Topping: 3/4 cup brown sugar and 1/4 cup cocoa powder.
• The Magic Liquid: 1 1/4 cups hot water.
Preparation Steps
1. Mix the Base: Whisk the flour, sugar, 2 tbsp cocoa, baking powder, and salt. Stir in the milk, melted butter, and vanilla until smooth. Spread this into a greased baking dish.
2. Add the Layer: Mix the brown sugar and the remaining 1/4 cup cocoa together. Sprinkle this evenly over the top of the batter in the dish. Do not stir it in!
3. The Pour: Carefully pour the hot water over the entire surface. Again, do not stir. This layer of water is what transforms into the fudge sauce at the bottom.
4. Bake: Put it in a preheated oven at 175°C (350°F) for about 35–40 minutes. The top should be firm like a cake, but bubbly sauce should be underneath.
5. Serve: Let it cool for 5 minutes so the sauce thickens. Serve it warm with a big scoop of vanilla ice cream.
Why it’s a "Yay":
• Texture: You get a fluffy cake top and a silky, molten chocolate bottom.
• Simplicity: You probably already have all these ingredients in your kitchen.
• Versatility: You can add chocolate chips to the batter or a pinch of cinnamon for a deeper flavor.
